I think this would be something great to see and do in Vegas. It's called the Pole Position Raceway. It is located across the street from the Palms. The track is a quarter of a mile long and is inside a 60,000 sq. ft. facility.

When I first saw a picture of the karts, I though they were like bumper cars but they are certainly not. They are 18 hp and will go up to 45 mph. The track is just like the real thing, probably because it was designed by real professional race car drivers.
The karts are even enviromentally friendly, they emit no exhaust.

While racing you will face long straightaways, hairpin turns and other elements. At the end of each race you receive a scorecard with your lap time and other race factors.
If you don't want to race, you can wander around and see actual motorcycles, helmets and other gear that was worn by pros. They also have an arcade and pool tables. Lots to see and do here.

The cost is:
2-Race Junior: $49 per person
2-Race Adult: $55 per person
3-Race Adult: $80 per person
All-You-Can-Race Day Pass: $125 (includes unlimited racing during all public race sessions). This is for adult racers only and is not available on Saturdays.
The accept cash and credit cards and are open 11am to midnight daily.
